Miriam Sorrell maintains the Mouthwatering Vegan Recipes blog and is publishing a cookbook in June 2013. Most of her recipes are easy to prepare and you’ll find many of the dishes have a mediterranean or Eastern flare. I stumbled upon her blog via Facebook and I strongly recommend her blog. She’s won a few awards and has been featured in several magazines. You should note she is based in the UK, so you may encounter a few ingredients or brands not commonly found in the US (she also uses metric system… yikes!) but you’ll find recipes like:

Healthy Happy Life – 100% Vegan
Kathy Patalsky updates this site regularly. Her recipes are very kid friendly, delicious, nutritious and always 100% vegan. If you love smoothies then you definitely need to stop by her site. Her book – “365 Vegan Smoothies” will be published in early spring/summer 2013. I recently fell in love with her vegan peanut butter cookies. Here blog entries are beautiful, contain many pictures and the recipes are clear and easy to follow. I’m always looking for vegan breakfast recipes and her blog has many.
